Title: Coffee Cake Muffins (Jvn) ++

Yield: 1 Dozen

BATTER
1 1/2cFlour
2tsBaking powder
1/2tsSalt
1/4cButter
1/2cSugar
1 Egg
2tbPlain yoghurt
3/4cMilk
1/2tsVanilla*
SPICE MIX
1/2cPacked brown sugar
2tbFlour
1tsCinnamon*

Spice mix: stir together.

Batter: Mix dry ingredients and make well.

Cream butter, sugar and egg. Add yoghurt milk and vanilla. Pour into well and stir to moisten.

Fill greased muffin tins 1/3 full. Sprinkle on spice mix. Cover with more batter, filling to 2/3 full. Bake 400 20-25 min.

*Variations: : 1. Decorate or glaze while hot with simple, thick icing made from powdered sugar and a little liquid. : 2. Replace some or all of vanilla with another extract such as almond. : 3. For a crunchy top, place half of spice mix inside muffins, and the rest on top before baking. : 4. Replace some or all of cinnamon with other spice(s) such as nutmeg. : 5. Sprinkle a very small amount of finely grated citrus peel over first layer of batter before the spice mix. : 6. Use rum or other liquor instead of vanilla.
